Student: "To me food insecurity is not being able to eat hardly anything while I’m at school. My options are typically limited to rice crispy treats, potato chips, or a small and very expensive veggie salad. I can’t eat gluten because I have a skin condition called “eczema”, so it's not like I can grab a sandwich. I also tend on the side of vegan, which limits my options even more… and honestly even if there was a vegan and gluten free sandwich, I probably couldn't even afford it. I should meal prep on the weekends because … its cheaper. But I have to go to work and get all of my homework done so it's really hard to find the time. Sometimes it’s even hard to get to the grocery store and then cut out enough time to make dinner so a lot of the time I end up eating cheap and unhealthy food."
